Vanilla Pudding From Scratch: A Second Cup Recipe Suggestion
Friday, October 16, 2009 at 12:00AM I remember being amazed reading the back of an Argo Corn Starch box that I could make pudding from scratch. Pudding like pancakes had to be made from boxes brought from the store. (In case you are unaware like I was, pancakes can be made from scratch also) (Seriously I am not trying to be ironic here, I didn’t know) Further more I had all the ingredients on hand. 10 minutes of time, easy to do. Thin the pudding out with some milk for a nice topping for pound cake or gingerbread. (Both of which are easy to make from scratch, who knew!)
- 1/3 cup sugar
- 1/4 cup corn starch
- 1/8 teaspoon salt
- 2-3/4 cups milk
- 2 tablespoons butter
- 1 teaspoon vanilla
- Combine sugar, corn starch and salt in a pot. Gradually stir in milk until smooth.
- Bring to boil over medium heat, stirring constantly, and boil 1 minute. Remove from heat. Stir in butter or margarine and vanilla.
- Pour into serving bowl. Cool, enjoy warm or chill in fridge.
Serves four or one teenage boy after school.

Vanilla? Vanilla? Why do people even eat that?? We need chocolate recipes, Carol!!
When feeding boys and squeezing every nickle till it hollered I made all our puddings from scratch. When the baking/cooking stuff is all located efficiently it really didn't take any longer than making cooked pudding from a box (which we always thought was better than instant anyway)
I would have used real vanilla not that extract powder thing .....
it's more like what did I USED to make from scratch that I now make from a box. I've gotten very lazy in my old age so the things I used to make from scratch I now prefer to use a mix.
